  • Sweetened Condensed Milk

  • Miniature Marshmallows

How to make rocky road fudge

First, you will need a baking dish and we like to use a 9×13 size. Go ahead and line the pan with foil or parchment paper and spray with cooking spray.

Second, add sweetened condensed milk and chocolate chips in a microwave safe bowl.You can also use a double boiler to melt the chocolate. You would melt the chocolate over medium heat.

Then heat this in the microwave in 30 second intervals. Make sure to stir after each interval until the mixture is completely melted and it is mixed together really good.

Microwave times will vary but it took mine about 90 seconds. You definitely want to keep a close eye on it and only do this in intervals so you don’t burn the chocolate.

Add the vanilla extract and stir. Then gently stir in the nuts and marshmallows.

Once this is combined together, pour the fudge mixture into the prepared pan. Place in the fridge until it is firm.

Once set, lift the foil out of the pan and cut into squares.

Can you use evaporated milk instead of sweetened condensed milk?

Because sweetened condensed milk and evaporated milk are very similar,you can substitute evaporated milk for the sweetened condensed milk. You will not get the same sweet, caramelized flavor with evaporated milk but the consistency will be similar.

Store any fudge leftovers in an air tight container in the refrigerator for up to 1 week.

Can you freeze this?

The fudge can also be frozen up to a month. Just place inside an airtight freezer container. I also like to put wax paper in between the fudge slices.

This helps to prevent sticking. If you do a lot of baking for the holidays, this is something you can definitely make ahead of time.

  • Line a 9X13 baking pan with foil or parchment paper and then spray with a non stick cooking spray.

  • Place the condensed milk and chocolate in a microwave safe bowl.

  • Heat in 30 second intervals in the microwave, stirring after each interval until the mixture is melted and well combined. Mine took approximately 90 seconds.

  • Mix in the vanilla extract. This stir in the peanuts and miniature marshmallows.

  • Pour the mixture into the prepared pan. Refrigerate until firm.
